Serves 4
Heat a large frying pan over medium heat and add a drizzle of olive oil. Add the potatoes, season with salt and pepper and cook for about 8 minutes, turning at times, until they start to colour.
Add the onion, carrot and garlic and crumble over the burger patties. Add the mushrooms, smoked paprika and thyme and cook for 8-10 minutes, tossing at times.
Add the kale for the last few minutes of cooking.
Remove the pan from the heat, garnish with fresh parsley and serve.
