Sizzling Chilli Meatball Bowls

Ingredients

  • 1 x Pack of Angel Bay Gourmet Beef Meatballs
  • 5 Tbsp Sweet Chilli Sauce
  • 200g pack Vermicelli Noodles
  • 2 x Carrots, julienned or finely cut
  • 1 x Cucumber, peeled into ribbons
  • 200g Sugar Snap Peas
  • 1 x Baby Cos Lettuce, washed and halved
  • Coriander and Mint leaves for garnish

Method

  1. Preheat your oven to 200°C and cook the Angel Bay Gourmet Beef Meatballs according to the instructions on the packet.

  2. While the meatballs are in the oven, cook the vermicelli noodles according to the instructions. Divide the cooked vermicelli noodles and the vegetables between four bowls.

  3. When the meatballs are cooked, pour over the sweet chilli sauce and toss well until coated. Divide the meatballs evenly between each bowl, drizzle over any leftover chilli sauce, garnish with coriander and mint and serve.
